Nutritional Science

Nutritional Science is designed for those students interested in health, scientific and commercial aspects of nutrition and food. Students majoring in Nutritional Science may choose a concentration in Dietetics, Food Science & Technology and/or various emphases in General Nutrition.

In the Dietetics concentration, students may meet the academic requirements of The American Dietetic Association (ADA) to become a Registered Dietitian (RD). To qualify for the ADA Registration Examination, a student must also fulfill the Dietetic Internship requirements set by the ADA. The Nutrition and Food Science Department offers a post-graduate degree accredited dietetic internship (accreditation by ADA). Graduates of the Dietetics program are prepared to pursue careers in such areas as community and health agencies, corporate health programs, health-care facilities and hospitals, private practice, child care organizations and senior nutrition programs.

Students pursuing the Food Science & Technology concentration will complete the coursework required by the Institute of Food Technologists (IFT). This curriculum prepares the student for careers in the food industry including: quality control, product development, food processing and test kitchens.

Students interested in General Nutrition can pursue one of the following emphases: Nutritional Science, Nutrition Education, Sports Nutrition, Environmental Food and Health Specialist or Food Management. These emphases help prepare students for a variety of goals including: graduate school in nutritional science, medical or dental school, nutrition education specialist, nutrition for sport consultant, consumer specialist, food editor media, food saftey specialist foodservice manager, etc. The department also offers minors in Nutrition and Food Science, Nutrition and Physical Performance, and Food Science.
