Foodservice Procurement

Description
Purchasing in foodservice operations: food and equipment. Selection and storage of food and writing food specifications. Selection and layout of equipment and writing equipment specifications. Prerequisite: NUFS 111 and NUFS 111L or instructor consent. Misc/Lab: Lecture/activity 3 hours.
